The “perfect moment” changes every year—some summers it’s ready by late July, while other years you might be waiting until early September. A pro tip to check for ripeness? Use your fingernail to nick a kernel. If a milky white liquid pops out, it’s ready to go.
How to prep your corn
Once you’ve harvested your corn, don’t let it sit around too long. If you don’t process it within about eight hours, the quality and sweetness start to drop significantly. Here’s how to get it ready:
- Use a sharp knife to trim off the ends of the cobs.
- Get a large pot of water boiling on the stove.
- Drop the cobs into the boiling water.
- Depending on how you plan to use it later, you can either give it a quick blanch or boil it thoroughly for about five minutes.
Freezing your sweet corn
Once the corn has cooled down completely, you have options. You can pack the whole cobs into airtight freezer bags, or you can slice the kernels off the cob first. Whichever way you go, make sure to label your bags with the date so you don’t forget about them! Frozen corn stays delicious for about eight months.
